Is there an official Echoes of Aincrad Trello?

No. Trello boards are used by live, frequently-updated (often Roblox) games to publish patch info. Echoes of Aincrad is a single-player console/PC release, so there is no official Trello. The authoritative info source is the official site and Steam page.

Is there a server status page? Are the servers down?

There are no game servers to be down — Echoes of Aincrad is single-player with offline play enabled. 'Server status' only matters for platform services (Steam, PSN, Xbox Live). If you can't launch the game, check those platform status pages, not a game server.
